The term "Surtout" appeared in the last years of Louis XIV's reign with the arrival of the French Service. The "Surtout" was used to present service items such as salt and spice bowls, oil cruets, vinegar and sugar bowls, objects that remained on the table throughout the meal.

As uses evolved, the "Surtout" gradually lost its utilitarian function to become a table decoration, a prestigious distinction.
